Pie in a Bottle
(And Other Tasty Things...)

While not a gourmet cook per say, I have many good recipes to share.  I have several original recipes like: Pie in a BottleHomemade SalsaCake Mix Cookies.

 Pie In A Bottle: ( If you like pecan pie this is a must try)

1 jar (bottle) makes 1 pie.

To make the pie, pour one jar into your mixer and add two eggs, mix till foamy.

Add your choice of pecans or walnuts & chocolate chips to your pie shell, and then pour the pie mix over them. Bake in a 400 degree oven about 40 minutes. Let cool before serving.

 

Homemade Salsa (winter version)

2 cans whole pealed tomatoes
2 peppers (1 sweet red, 1 yellow)

1 large yellow onion

1 small can of tomato paste

1/2 cup white vinegar

Clean peppers and remove seeds, and dice. Peal & dice the onion. Remove the seeds from the tomatoes. In a large stock pot mix ingredients and cook over medium heat. Add water as needed, the sauce should be smooth but not thick. Let the sauce cook covered for 45 minutes, stirring often so it dose not stick or burn.

This also will make a great sauce to kick up your meat loaf !

 

Cake Mix Cookies

1/3 Cup soft butter & 1/2 Cup shortening (Crisco works best)
2 eggs

1/2 tsp. Vanilla

1 box cake mix - any kind (except marble)

Heat oven to 375, Mix butter, shortening, eggs & vanilla.
Thoroughly blend in cake mix, then roll into balls or use a cookie press

Place on greased cookie sheet

Bake 8 to 10 minutes.
